What This Man Eats

Edition One: Something that is part of everyday: BREAKFAST!

Omlete

This morning I made an experimental breakfast omelette.  I was really craving some Mexican food, and knew that 8am wasn’t the best time for a good Mexican fix.  I looked in my fridge and realized it was time to get creative.  I started my day out with a wonderfully fresh, and delicious  ”chicken fajita omelette” that’s only 380-400 calories and could really feed 2 people.  It fed me and Francy!

For this you will need
2 ounces of chicken breast
Fresh salsa (usually in the deli area)
Avocado
6 eggs
Low fat cheese
Greek yogurt
Hot sauce of choice
Ms dash seasoning

Start by grilling your chicken breast, I’m a fan of a foreman grill or you can even cook it in a pan on the stove. Season to taste, I’m a fan of the no salt added mrs dash seasonings.  For this one I used onion herb, and chili lime.

Next you will crack 2 whole eggs into a mixing bowl, and then 4 egg whites and beat them together.  I use 2 whole eggs because I can not stand just egg whites anymore, it is a preference thing, adds a few more calories but to me taste much better.

Now cook the eggs in a pan on top of the stove on low to medium heat and let them cook together as an omelette do not scramble.  As the eggs start to firm and after the flip, lay the chicken you grilled (cut into pieces) on one half, cover with low fat cheese and fold over to finish cooking the omelette.

Take your avocado and cut it into small cubes.

Plate the omelette, place a tablespoon of the cubed avocado, 2 tablespoons of salsa, and a tablespoon of Greek yogurt (plain), and another dash of cheese and there you have it!

I prefer to keep my avocado and salsa separate on the side, but many prefer it right on top.

Side note: you will see me use Greek yogurt in many cases where mayo or sour cream is involved, it’s a much lower calorie solution and taste very good.  Also, hot sauce is a great way to add flavor with very little to no calories to every dish.

  4. Never thought of adding chicken to my morning omelet! I use egg whites, left over veggies, feta cheese, and salsa with a little “slap yo momma”. Will be adding chicken next time!
